Eat This: Starches

Drop that fry! Health nuts rail against potatoes and your taste buds. Don’t let them bully you. You need starches. Not just the potato variety of starches. Legumes like beans and peas are starchy. Grains are starchy. You remember why we need whole grains? Read this for a recap on whole grains. This is only adds to why you need bread and potatoes in your life. Starches are carbs. And you need them.

What’s starches super power? I mean besides it’s allure for being bad. Starches do hold nutritional value. Yes, your standard boring health class textbook stuff. The stuff you really need like fiber, calcium, iron, and B vitamins. It’s also the energy your body needs. Starches break down slowly due to their polysaccharide nature and create sugar. This is where people get lost. Your body needs sugar, the right sugar called glucose. Your brain feeds on glucose and the rest of your body too. Polysaccharide contain sugars that take time to break down. This makes starches incredible. It doesn’t spike your blood sugars while giving your body what it needs. Plus, starches being poly or complex, they survive the digestive track longer than many foods. Starches make it through out the intestines to feed your microbiome better. Better microbiome means your body maintains immune system, happy chemicals, and digestion better.

Starches are my ideal for gut issues and autoimmune responses. It’s my go to when my allergies are triggered or my gut is flared. With starches being a wide variety, it makes it easy for most to get starches when dealing with food allergies or digestion issues. Starches could help absorb and soothe when inflammation hits.

When do Starches go BAD?

When refined sugars and too much fats are added. When too much oil and frying happens. You can have fries-baking or air fry is better. I love mashed potatoes. Just limit creams and fats. Broth or stock is necessarily a great alternative due to high sodium count. If you choose to use either of these ingredients for mashed potatoes, go low sodium. Wheat and grains become bad starches when they are bleached and refined. Legumes you need, but don’t let oils and creams take over their goodness.

And yes chips needs to be on short leash in your food relationship.

Eat your carbs and starches. Because the health nuts are wrong. You need it for everyday energy. You might need it to help you heal.
